Spicy Basil with Ground Turkey

Any ground meat can be used for this dish. If you’d like, you can substitute beef or pork for turkey. The level of spice can be adjusted by adding more or less Thai chilies.

  • 2 garlic cloves, peeled
  • ½ tsp. salt
  • 1 medium shallot, peeled
  • 4 Thai chilies
  • 1 Tbsp. vegetable oil
  • 1 lb. ground turkey
  • 1 Tbsp. fish sauce
  • ¼ tsp. sugar
  • 1 cup Thai sweet basil


  • Pound garlic, salt, shallot, and chilies into a paste using a mortar and pestle. Alternatively, put all ingredients in a small food chopper. Add salt later if using the chopper.
  • Heat a wok or a sauté pan over medium-high heat. Add oil and then fry the paste for 1 minute. Add ground turkey and continue to stir-fry for 2 minutes or longer until the meat is done. Add fish sauce and sugar.
  • Sprinkle the Thai basil over the top. Stir-fry until basil is soft, about 30 seconds, and take it off the heat.
