Spicy Curry & Mango Grilled Chicken Skewers

Sweet mango is the perfect partner to spicy marinated grilled chicken.

Ingredients
- 8 (10”) bamboo skewers, soaked in water for at least 20 minutes
- 1⁄4 cup plain yogurt
- 2 tablespoons Private Selection™ Indian Mango Scotch Bonnet Hot Sauce
- 1 tablespoon curry powder
- 1 1⁄2 teaspoons salt
- 1 pound boneless skinless chicken thighs, cut into 24 pieces
- 2 ripe mangoes, cut into 24 pieces
- 1 red onion, cut into 48 squares
Directions
- In a zip-top bag combine yogurt, hot sauce, curry powder and chicken. Seal and refrigerate for at least 1 hour.
- Heat grill to medium-high heat.
- On each skewer thread a piece of mango, red onion, chicken, red onion and repeat two more times.
- Oil grill grate; place skewers on grill. Cook, turning occasionally 16-18 minutes or until chicken reaches an internal temperature of 165°F. Refrigerate leftovers.
