Spicy Onion and Apple Soup

The combination of onion and apple is an unusual one, but you’ll be glad you tried it!

  • 2 Tbsp. vegetable oil
  • 2 cups chopped onion
  • 3 cloves garlic
  • 2 Tbsp. fresh minced ginger
  • 2 tsp. dry mustard
  • 1 tsp. ground cumin
  • 1⁄2 tsp. ground cardamom
  • 1⁄2 tsp. ground allspice
  • 1⁄4 tsp. ground cayenne pepper
  • 1 tsp. salt
  • 1 tsp. ground white pepper
  • 5 cups chopped tart apple
  • 4 cups vegetable broth
  • 2 cinnamon sticks
  • 2 Tbsp. lemon juice
  • 1⁄2 tsp. ground cinnamon


  • In a soup pot, heat the oil over medium heat. Add the onion, garlic, and ginger, sautéing for about 2 minutes. Add mustard, cumin, cardamom, allspice, cayenne, salt, and white pepper. Sauté for another 3 to 4 minutes.
  • Add the apples, broth, cinnamon sticks, and lemon juice. Increase heat to high and bring to a boil. Reduce heat to medium-low and simmer for 10 minutes.
  • Remove from heat and allow to cool slightly. Take out the cinnamon sticks and purée the soup in a food processor or blender. Return to the pot and warm to serving temperature over medium heat. Garnish each bowl with ground cinnamon.
