Spicy Pickled Beets
Make your own pickled beets in minutes. Perfect for salads and cheeseboards, this one pot recipe is easy enough for novice chefs. (But tasty enough for even the most experienced cook!)

- ½ cup apple cider vinegar
- ½ cup water
- ½ honey
- 1 Tbsp. kosher salt
- 1 clove garlic
- ½ lb. fresh beets, peeled and diced
- Combine all ingredients in a large saucepan over high heat. Cover and bring to a boil. Reduce heat to medium and simmer until beets are tender, about 15 minutes. Allow to cool slightly. Transfer beets and brine to a 1 pint mason jar.
- Twist lid on tightly. Refrigerate overnight. Store in refrigerator and enjoy within 6 weeks.
