Spicy Roasted Chickpeas
Spicy roasted chickpeas provide a nice dose of fiber and protein without the fat and calories of regular nuts and seeds.

- 2 Tbsp. olive oil
- ½ tsp. ground coriander
- ½ tsp. ground cumin
- ½ tsp. red pepper flakes
- ¼ tsp. seasoned salt
- 2 cups canned chickpeas, rinsed and drained
- Preheat oven to 400°F. Spray a nonstick baking sheet with nonstick spray and set aside.
- Combine the oil and seasonings together in a medium-size bowl. Add the chickpeas and toss until evenly coated. Spread out the beans in a single layer on the prepared baking sheet and place in the oven. Shake the pan every 10 minutes to make sure the beans are cooking evenly. Bake for 20 to 30 minutes, until crisp and golden. Let cool slightly before serving. Can be made the day before and kept in an airtight container.
