Spicy Thai Dressing

This dressing is great as a salad dressing or seafood dipping sauce. The dressing will keep in the refrigerator for five days.

Ingredients

  • 8 fresh red Thai chilies, minced
  • 8 cloves garlic, minced
  • 6 Tbsp. fish sauce
  • ½ cup lime juice
  • 2 tsp. sugar
  • 2 tsp. honey

Directions

  • To make the dressing, crush the chilies and garlic with a mortar and pestle into a coarse paste. Add fish sauce, lime juice, sugar, and honey to the chili and garlic paste. Alternatively, put all ingredients in a food processor or blender and blend until chilies and garlic are chopped into small pieces, about 10 seconds.
