Spicy Thai Dressing
This dressing is great as a salad dressing or seafood dipping sauce. The dressing will keep in the refrigerator for five days.

- 8 fresh red Thai chilies, minced
- 8 cloves garlic, minced
- 6 Tbsp. fish sauce
- ½ cup lime juice
- 2 tsp. sugar
- 2 tsp. honey
- To make the dressing, crush the chilies and garlic with a mortar and pestle into a coarse paste. Add fish sauce, lime juice, sugar, and honey to the chili and garlic paste. Alternatively, put all ingredients in a food processor or blender and blend until chilies and garlic are chopped into small pieces, about 10 seconds.
