Spicy Yellow Bean Sauce
This sauce is great with noodle soups or as a salad dressing. Dilute with more water for dressing.

- 1 Tbsp. minced cilantro stems
- 2 tsp. chopped garlic
- 1 Tbsp. chopped ginger
- 3 Tbsp. soybean paste or yellow bean sauce
- 1 long red chili (Serrano or finger pepper)
- 1 tsp. palm sugar
- 1 Tbsp. white vinegar
- Combine all ingredients in a blender and blend until smooth. Alternatively, pound all ingredients using a mortar and pestle until smooth, adding vinegar at the end.
