Spinach with Soybean Paste
Traditionally, morning glory is used for this recipe, but spinach makes a great substitution. Snow pea leaves are another great choice.

- 2 Tbsp. vegetable oil
- 4 cloves garlic, peeled and bruised
- 4 bruised chilies
- 6 cups spinach
- 1 tsp. soybean paste
- 2 Tbsp. light soy sauce
- ½ cup vegetable stock
- Heat a deep sauté pan or wok over high heat. When hot, turn heat down to medium and add oil. Fry garlic and chilies until fragrant, about 10 seconds. Add spinach, soybean paste, soy sauce, and water or stock, and stir-fry until vegetables are wilted, about 2–3 minutes. Serve immediately.
