Use this Sriracha-tinged sauce as you would regular mayonnaise or as a dipping sauce for French fries.

- 1 large egg yolk
- ½–1 Tbsp. Sriracha, depending on your taste
- ⅛ tsp. salt
- ½ cup olive oil
- 1 garlic clove, peeled and finely minced
- 1 tsp. lemon juice
- Combine egg yolk, Sriracha, and salt in a blender. Turn blender on and pour oil through the top in a thin stream until the mixture has the consistency of mayonnaise. Stir in minced garlic. Taste; add lemon juice and adjust seasoning to taste.
