Standing Rib Roast

This is a terrific oven roast for a special family dinner, and it’s relatively easy to fix. Serve this roast with baked or mashed potatoes and a wilted spinach salad, along with your favorite special vegetable side dish.

Ingredients

  • 1 standing rib roast of beef (6 lbs.)
  • 2 tsp. salt
  • ¾ tsp. ground black pepper
  • ¼ tsp. garlic powder

Directions

  • Preheat oven to 450°F.
  • Rub roast all over with salt, pepper, and garlic powder.
  • Place on a rack in a shallow pan and roast for 25 minutes. Reduce heat to 350°F and roast for 1½ hours, or to an internal temperature of about 135°F for medium rare. Cover loosely with foil and let stand for 10 minutes before carving.
