Steamed Coconut Rice
Making basmati rice in the microwave takes less time and still has the rich, nutty flavor of stove-top basmati.

- 1½ cups basmati rice
- 1 Tbsp. butter
- 2 shallots
- 1¼ cups coconut milk
- 1¾ cups water
- ½ tsp. salt
- Rinse the rice in cold water and drain.
- Place the butter and chopped shallots in a microwave-safe 3-quart casserole dish. Microwave on high heat for 1½ minutes, stir, then microwave for 30 seconds at a time until the shallots are tender.
- Add the coconut milk, water, rice, and salt. Microwave on high for 10 minutes. Stir the rice. Cover the dish with microwave-safe wax paper. Microwave for 3 minutes and then for 1 minute at a time until the liquid is absorbed.
- Remove the dish from the heat. Let stand for 5 minutes. Fluff and serve.
