Chorizo is a semihard sausage much like kielbasa, which you can substitute if you wish, although chorizo is spicier.

- 2 oz. chorizo sausage
- 1 Tbsp. extra-virgin olive oil
- 1 cup dry white wine
- 1 Tbsp. sherry
- Cut the sausage into slices, about ½" thick. Sauté the sausage slices in olive oil over medium heat for 5 minutes.
- Add the white wine and sherry and bring to a boil. Turn the heat down and simmer for 25 minutes. Serve hot.
