Stewed Chorizo

Chorizo is a semihard sausage much like kielbasa, which you can substitute if you wish, although chorizo is spicier.

  • 2 oz. chorizo sausage
  • 1 Tbsp. extra-virgin olive oil
  • 1 cup dry white wine
  • 1 Tbsp. sherry


  • Cut the sausage into slices, about ½" thick. Sauté the sausage slices in olive oil over medium heat for 5 minutes.
  • Add the white wine and sherry and bring to a boil. Turn the heat down and simmer for 25 minutes. Serve hot.
