Many people don’t realize that Napa cabbage, which is named after the Napa Valley region of California where it is cultivated, is actually a type of Chinese cabbage, also called celery cabbage.

- 1½ Tbsp. vegetable oil
- 3 cloves garlic, peeled and crushed
- ¼ tsp. chili flakes
- 1 lb. Napa cabbage, cored and cut crosswise into thin strips
- ½ tsp. sugar
- ¼ cup chicken broth
- Heat a wok or medium skillet over medium-high heat until it is nearly smoking. Add the oil. When oil is hot, add garlic, chili flakes, and cabbage. Sprinkle with sugar.
- Add chicken broth. Stir-fry cabbage for 3–4 minutes until it is tender but still crisp. Remove garlic before serving.
