Stir-Fried Cauliflower (Gobi Ki Subzi)

Serve this popular North Indian dish with basmati rice or Indian flat breads such as naan or chapati.

  • 3 Tbsp. vegetable oil
  • 1” piece fresh gingerroot, julienned
  • 1½ lbs. cauliflower florets
  • 2 tsp. coriander powder
  • ½ tsp. red chili powder
  • ¼ tsp. turmeric powder
  • ½ tsp. salt


  • In a large skillet, heat the vegetable oil on high. Add the ginger and sauté for about 10 seconds. Add the cauliflower florets and sauté for about 3 to 4 minutes. Add the coriander, red chili, and turmeric powder; sauté for 1 minute.
  • Reduce the heat to low. Add the salt and 2 to 3 tablespoons of water. Cover and cook until the cauliflower is done, about 5 to 10 minutes. Serve hot.
