This quick strawberry jam is sweetened with honey and works well with breakfast treats or nut butter sandwiches.

- 4 cups halved strawberries
- 3 Tbsp. lemon juice
- 3 cups honey
- Place the strawberries into a large nonreactive pot and mash with a wooden spoon or potato masher until the fruit is broken down. Stir in the honey and lemon juice. Bring to a boil over high heat and then reduce to medium-high heat. Keep at a low boil for 40 minutes, stirring occasionally, until the liquid has reduced by half and foam has subsided.
- Ladle into 2 small hot, sterilized canning jars, seal, and store in the refrigerator for up to 2 weeks.
