- 4 cups ripe strawberries, mashed
- 4 cups sugar
- 1 Tbsp. lemon juice
- Mix sugar and berries in a bowl and let sit at room temperature for about 1 hour so they begin getting juicy.
- Transfer to a pan. Add lemon juice and bring to a full rolling boil for 7 minutes, stirring constantly.
- Pour into 8 presterilized half-pint jars with 1⁄4 inch headspace. Process in a boiling-water bath for 10 minutes. May be kept for one year in dark, cool area.
