Strawberry-Rhubarb Compote

Try this over Greek yogurt or pancakes.

Ingredients

  • 1 lb. strawberries, diced
  • ½ lb. rhubarb, diced
  • 2 Tbsp. lemon juice
  • 1 Tbsp. lemon zest

Directions

  • Place all ingredients into a 4-quart slow cooker.
  • Cook for 2 hours on low.
  • Lightly mash with a potato masher.
  • Cook on high, uncovered, for 1 additional hour.
