Strawberry Rhubarb Jam

- 1½ lbs. fresh strawberries, hulled and chopped
- 1½ lbs. rhubarb, diced
- 1¾ cups sugar, divided
- ¼ cup lemon juice
- Place strawberries, rhubarb, 1 cup sugar, and lemon juice in a large saucepan. Carefully mash the strawberries with a fork or wooden spoon while mixing with the other ingredients.
- Cook over medium heat until sugar has completely dissolved, about 3–5 minutes. Taste the mixture and add another ¼–¾ cup sugar. Cover and reduce heat to low. Simmer jam for about 20 minutes, or until mixture reaches 220°F.
- Remove from heat and immediately transfer to sterile canning jars. Cover with lid and chill for at least 1 hour.
