Strawberry Rhubarb Sorbet

Strawberries and rhubarb are a classic pairing. Make this sorbet for the first warm day of spring.

  • 2 cups sliced rhubarb
  • 1⁄2 cup water
  • 1⁄8 tsp. orange zest
  • 3 cups fresh or frozen strawberries
  • 1⁄4 cup maple syrup
  • 1⁄8 tsp. sea salt


  • Simmer the rhubarb, water, and orange zest in a small saucepan for 5 minutes and remove from heat.
  • Purée strawberries in a blender. Add rhubarb mixture, maple syrup, and salt to the blender and blend till smooth.
  • Pour mixture into a container and chill for 15 minutes. Then pour mixture in an ice cream maker and mix according to ice cream maker’s instructions.
