Sugar-Free Blueberry Pie
Scrumptious blueberry pie gets a clean makeover in this recipe. Skip the sugar and let the sweetness of the blueberries speak for itself!

- 3 dates, pitted
- 2⁄3 cup coconut milk
- 3 cups blueberries, washed
- 1 baked pie shell (9 inches)
- In a blender, combine the dates and coconut milk, and blend until emulsified and thickened. In a small pot over medium heat, bring the coconut milk and date mixture to a boil. Reduce heat, add blueberries, and simmer for 5 minutes.
- Remove the blueberries from the heat, and allow to cool for 5 to 10 minutes. Pour the blueberries into the prepared pie shell and refrigerate for at least 4 hours.
