Sugar-Free Celeriac Salad
The French love celeriac, and it’s more and more readily available here. It’s an excellent and very tasty sandwich additive to a slice of ham or turkey.

- 1 celery root, peeled and slivered
- ½ tsp. salt
- ½ tsp. ground black pepper
- ½ cup mayonnaise
- 2 Tbsp. cider vinegar
- ½ tsp. Splenda
- ¼ tsp. celery seeds
- Place the grated celeriac in a bowl and sprinkle with salt and pepper. Whisk the rest of the ingredients together and dress. Serve chilled or at room temperature.
