Sugar-Free Celeriac Salad

The French love celeriac, and it’s more and more readily available here. It’s an excellent and very tasty sandwich additive to a slice of ham or turkey.

  • 1 celery root, peeled and slivered
  • ½ tsp. salt
  • ½ tsp. ground black pepper
  • ½ cup mayonnaise
  • 2 Tbsp. cider vinegar
  • ½ tsp. Splenda
  • ¼ tsp. celery seeds


  • Place the grated celeriac in a bowl and sprinkle with salt and pepper. Whisk the rest of the ingredients together and dress. Serve chilled or at room temperature.
