Summer Cucumber Soup

This is very refreshing on a hot day. This soup is so simple to prepare, you can make an elegant and healthy summer soup in no time.

  • 2 medium English cucumbers, peeled and chopped
  • 2 cups reduced-fat buttermilk
  • 1 cup plain low-fat Greek yogurt
  • 2 tsp. salt
  • 3 Tbsp. lemon juice
  • 2 tsp. grated lemon zest
  • 1⁄2 tsp. ground black pepper
  • 1⁄2 cup snipped fresh chives


  • Mix cucumbers, buttermilk, yogurt, salt, lemon juice, zest, and pepper in blender and blend until smooth. Chill overnight. Serve in chilled bowls topped with chives.
