Summer Cucumber Soup
This is very refreshing on a hot day. This soup is so simple to prepare, you can make an elegant and healthy summer soup in no time.

- 2 medium English cucumbers, peeled and chopped
- 2 cups reduced-fat buttermilk
- 1 cup plain low-fat Greek yogurt
- 2 tsp. salt
- 3 Tbsp. lemon juice
- 2 tsp. grated lemon zest
- 1⁄2 tsp. ground black pepper
- 1⁄2 cup snipped fresh chives
- Mix cucumbers, buttermilk, yogurt, salt, lemon juice, zest, and pepper in blender and blend until smooth. Chill overnight. Serve in chilled bowls topped with chives.
