Summer Squash Hummus

Summer squash replaces the traditional garbanzo beans in this recipe. It is good served as a dip for flax crackers and as a spread in sandwiches or burritos.

Ingredients

  • 2 cups summer squash, peeled and sliced
  • 1 clove garlic
  • 4 Tbsp. tahini
  • 2 Tbsp. lemon juice
  • 2 Tbsp. olive oil
  • 1 tsp. ground paprika
  • 2 Tbsp. chopped fresh parsley

Directions

  • In a food processor with the S blade, process the zucchini, garlic, tahini, lemon juice and olive oil until almost smooth.
  • Place in a serving bowl and garnish with the paprika and parsley.
