Summer Squash Hummus
Summer squash replaces the traditional garbanzo beans in this recipe. It is good served as a dip for flax crackers and as a spread in sandwiches or burritos.

- 2 cups summer squash, peeled and sliced
- 1 clove garlic
- 4 Tbsp. tahini
- 2 Tbsp. lemon juice
- 2 Tbsp. olive oil
- 1 tsp. ground paprika
- 2 Tbsp. chopped fresh parsley
- In a food processor with the S blade, process the zucchini, garlic, tahini, lemon juice and olive oil until almost smooth.
- Place in a serving bowl and garnish with the paprika and parsley.
