Sunflower Raspberry Dressing

This is a delicious salad dressing to serve with arugula or other peppery greens. Macadamia nuts or pine nuts are good substitutes for the sunflower seeds.

  • ½ cup sunflower seeds, soaked for 6 hours
  • 1 cup raspberries
  • 2 Tbsp. lemon juice
  • ¼ cup water
  • ½ tsp. kosher salt
  • ¼ tsp. ground black pepper


  • Place sunflower seeds, raspberries, and lemon juice in a blender and blend until smooth. Gradually add water until the dressing reaches the desired consistency. Season with salt and pepper.
