Ingredients

  • 2 stalks celery, including leaves
  • 1⁄2 cucumber
  • 1⁄4 head green cabbage
  • 2 stalks bok choy
  • 1⁄2 medium apple, cored
  • 1⁄2 lemon, peeled
  • 1 piece (1⁄2 inch) ginger
  • 1⁄2 cup parsley
  • 5 kale or collard leaves
  • 1 cup spinach

Directions

  • Process the celery and cucumber through an electronic juicer according to the manufacturer’s directions.
  • Cut the cabbage into chunks and add to the juicer, followed by the bok choy, apple, and lemon.
  • Add the ginger and parsley.
  • Add the kale or collards, and the spinach.
  • Serve alone or over ice.
