Swanson Creamy Mashed Potatoes
These creamy potatoes fit deliciously with just about any holiday meal. They’re full of rich and savory flavor, and could be made ahead of time and placed in a slow cooker until ready to serve.

Ingredients
- 1 1⁄2 pounds Yukon gold potatoes, peeled and quartered
- 3 tablespoons Sour Cream
- 2 tablespoons unsalted butter, melted
- 2 tablespoons Swanson® Chicken Broth
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 2 tablespoons fresh chives, chopped
- 2 tablespoons green onions, chopped
- 3 tablespoons bacon, cooked and chopped
Directions
- Place the potatoes in a medium saucepan and fill with enough cold water to fully cover the potatoes. Turn heat to high and bring to a boil, then reduce the heat to low and allow to simmer, covered, for 15-20 minutes, until the potatoes are easily pierced with a fork.
- Drain the potatoes and start mashing the potatoes with a potato masher. Once the potatoes are mostly mashed, add the sour cream, melted butter and broth. Beat until the potatoes are smooth. Add the salt and pepper.
- Stir in the chives, green onions and bacon.
- Serve and refrigerate leftovers.
