This deep-purple treat gets its color from the vibrant beets and deep-colored radicchio. Packed with vitamins A, B, C, E, and K, this already nutritious blend packs a protein punch as well with the creamy Greek yogurt.

- 1 cup chopped radicchio
- 3 cups sliced beets
- 1 cup plain low-fat Greek yogurt
