Sweet Honey Cornbread

This bread tastes great with butter and is a delicious accompaniment to any soup.

  • 1 cup yellow cornmeal
  • 1 cup flour
  • 1⁄4 cup sugar
  • 1⁄2 tsp. salt
  • 2 1⁄2 tsp. baking powder
  • 1 cup heavy cream
  • 1⁄4 cup applesauce
  • 1⁄4 cup honey
  • 2 eggs


  • Sift together cornmeal, flour, sugar, salt, and baking powder. In separate bowl, mix together heavy cream, applesauce, honey, and eggs. Combine wet and dry ingredients, and stir just enough to mix them.
  • Pour batter into a greased 9-by-9-inch pan. Bake at 400°F for 20 to 25 minutes until a knife inserted in the center comes out clean. Serve warm or at room temperature.
