Sweet Mascarpone Sauce
Tiramisu lovers will recognize this sauce as a version of the mascarpone cream layered into the famous Italian dessert. It’s delicious on all sorts of desserts. Try it with fresh berries.

- 4 egg yolks
- ⅔ cup sugar
- 2 cups mascarpone cheese, softened
- 1 tsp. vanilla
- Combine egg yolks and sugar in a heatproof bowl. Set bowl over a pan of very hot, but not boiling, water. Make sure the water does not come in contact with the bottom of the bowl. With an electric mixer on medium speed, beat eggs and sugar together for 3 to 5 minutes or until mixture is thick and the beaters leave a trail in the egg yolks. Remove from heat and allow to cool completely.
- In a large bowl, combine softened mascarpone and the vanilla. Add egg yolk mixture to the cheese and beat until smooth. Cover and refrigerate until ready to use.
