Sweet Potato Casserole
This is a welcome side dish at almost any holiday buffet.

- 2 cans (29 oz.) sweet potatoes
- 1⁄3 cup butter, melted
- 2 Tbsp. granulated sugar
- 2 Tbsp. brown sugar
- 1 Tbsp. orange juice
- 2 large eggs, beaten
- 1⁄2 cup whole milk
- 12 marshmallows
- Preheat oven to 350°F. Spray a casserole dish with nonstick spray.
- Drain the sweet potatoes, add to a bowl, and mash them together with butter, granulated sugar, and brown sugar. Stir in the orange juice, eggs, and milk. Transfer the sweet potato mixture to casserole dish. Bake for 40 minutes.
- Turn the oven to broil. Top casserole with marshmallows and broil for 5 minutes, until marshmallows are melted and toasted.
