Sweet Potato Fries
These are a tasty alternative to regular fries. You can serve them with ketchup or try making a sweet dipping sauce from honey, mayonnaise, and cinnamon.

- 4 large sweet potatoes
- 4 cups vegetable oil
- Preheat oven to 350°F.
- Peel sweet potatoes and slice them into 1⁄2-inch-thick planks lengthwise. Stack the planks and slice them lengthwise into 1⁄2-inch-wide sticks.
- Heat oil in a deep pot to 330°F.
- Add 1 cup sweet potatoes to the hot oil; blanch for 3 minutes. Remove the potatoes from the oil, lay them out on a baking sheet pan, and repeat the process with the rest of the sweet potatoes.
- Bake sweet potatoes for 35 minutes until they become crisp.
