Sweet Potato Fritters
This sweet treat can be served alongside a meal or dusted with confectioners’ sugar for dessert. Delicious with aioli or mayonnaise as a savory side.

- 1 cup grated sweet potato
- 1 cup white cake mix, sifted
- 1 large egg, beaten
- ½ cup whole milk
- 2 cups canola oil
- In a large bowl mix all ingredients well to form a batter. Drop by large spoonfuls into hot oil. Fry for approximately 20 seconds on each side. Lift out browned fritters and drain on a paper towel.
