Sweet Potato Mash with Sour Cream and Rosemary
A great departure from those too-sweet potatoes that taste more like dessert.

- 2 medium-sized sweet potatoes
- 3 Tbsp. sour cream
- ½ tsp. salt
- ¼ tsp. white pepper
- 2 Tbsp. melted butter
- 1 Tbsp. chopped fresh rosemary
- Preheat oven to 350°F.
- Wrap the potatoes in foil and place them directly on the oven rack. Bake the potatoes until a knife inserted in the deepest part comes free with no resistance. Let cool for about 5 minutes, until cool enough to handle.
- Peel off the skin and place the potatoes in a bowl. Mash the potatoes with the sour cream, salt, and pepper. Serve hot with melted butter and chopped rosemary.
