Sweet Potato Mash with Sour Cream and Rosemary

A great departure from those too-sweet potatoes that taste more like dessert.

Ingredients

  • 2 medium-sized sweet potatoes
  • 3 Tbsp. sour cream
  • ½ tsp. salt
  • ¼ tsp. white pepper
  • 2 Tbsp. melted butter
  • 1 Tbsp. chopped fresh rosemary

Directions

  • Preheat oven to 350°F.
  • Wrap the potatoes in foil and place them directly on the oven rack. Bake the potatoes until a knife inserted in the deepest part comes free with no resistance. Let cool for about 5 minutes, until cool enough to handle.
  • Peel off the skin and place the potatoes in a bowl. Mash the potatoes with the sour cream, salt, and pepper. Serve hot with melted butter and chopped rosemary.
