Sweet Potato Soup
This luscious soup is a perfect winter treat. And it’s a great post-workout snack. It provides both fluid and carbohydrates to help refuel and rehydrate.

- 3 large sweet potatoes, peeled and cubed
- 2 cups vegetable broth
- 1 can (15 oz.) sliced mangoes, undrained
- ¼ tsp. ground allspice
- ½ cup coconut milk
- Place all ingredients except coconut milk in a 4-quart slow cooker. Cover and cook on low for 8 hours.
- When sweet potatoes are soft, purée soup in blender and stir in coconut milk.
