Sweet Red Bean Paste
This recipe is frequently used as a filling for steamed buns.

- 1 1⁄2 cups water
- 1⁄2 cup dried red beans, soaked overnight and drained
- 1⁄4 cup sugar
- 1 1⁄4 Tbsp. vegetable oil
- In a medium saucepan bring the water to a boil. Add the beans and simmer for at least 2 hours or until they are tender. Drain.
- Place the beans and the sugar in a blender and process until smooth. Heat the oil in a preheated wok or saucepan. Add the bean paste and stir-fry until it is dry. Store in a sealed container in the refrigerator. The bean paste will last for approximately 1 week.
