Sweet Roasted Carrot
This side dish with its gorgeous color and aroma elevates a simple meal into an elegant and sophisticated one.

- 16 small carrots, peeled
- 3 Tbsp. olive oil
- 1⁄4 cup plus 1 Tbsp. coconut sugar, divided
- 1 Tbsp. molasses
- 1⁄2 tsp. kosher salt
- 2 tsp. fresh thyme
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Place carrots on the baking tray and cover them with the olive oil, 1⁄4 cup coconut sugar, molasses, and salt.
- Bake carrots for 30 minutes. After 15 minutes, roll carrots around in the pan so they are in as much of the oil and sugar as possible. During the last 10 minutes of baking, add remaining coconut sugar and thyme.
