Sweet and Sour Cucumber Salad
This super-simple vegetable salad makes a great accompaniment to any Asian meal.

- 1 cup white vinegar
- 1 cup water
- 1 cup sugar
- 1½ tsp. salt
- Juice of 1 lime
- 4 large cucumbers
- 1 small red onion, sliced
- ⅓ cup chopped dill
- In a saucepan, combine vinegar, water, sugar, and salt. Bring to a boil, stirring. Cook just until sugar has dissolved. Remove from heat and stir in lime juice. Cool slightly.
- Pour dressing into a glass container, cover, and refrigerate 1 hour.
- Peel and slice cucumbers. Combine cucumbers, onion, and dressing in a shallow dish. Toss with dressing and sprinkle with dill.
