Sweet and Sour Cucumber Salad

This super-simple vegetable salad makes a great accompaniment to any Asian meal.

  • 1 cup white vinegar
  • 1 cup water
  • 1 cup sugar
  • 1 1⁄2 tsp. salt
  • Juice of 1 lime
  • 4 large cucumbers
  • 1 small red onion, sliced
  • 1⁄3 cup chopped dill


  • In a saucepan, combine vinegar, water, sugar, and salt. Bring to a boil, stirring. Cook just until sugar has dissolved. Remove from heat and stir in lime juice. Cool slightly.
  • Pour dressing into a glass container, cover, and refrigerate 1 hour.
  • Peel and slice cucumbers. Combine cucumbers, onion, and dressing in a shallow dish. Toss with dressing and sprinkle with dill.
