Sweet-and-Sour Meat Loaf

Be sure not to over mix the meat loaf or it can dry out during cooking. Place an instant-read kitchen thermometer in the center of the meat loaf to check for doneness.

  • 1½ lb. ground beef
  • 1 can (5.5 oz.) tomato paste
  • ¼ cup milk
  • 3 Tbsp. brown sugar
  • 3 Tbsp. vinegar
  • 2 tsp. soy sauce
  • 1 egg, beaten
  • ½ cup bread crumbs
  • 2 Tbsp. minced onion
  • ¼ tsp. salt
  • ¼ tsp. ground black pepper


  • In a large bowl, combine all the ingredients.
  • Shape into a loaf and place in a microwave-safe casserole dish. Cover with microwave-safe wax paper.
  • Microwave on high heat for 15 minutes, 5 minutes at a time, rotating the dish a quarter turn between each period. If the meat loaf is not cooked after 15 minutes, continue to cook for 1 minutes at a time until done (total cooking should be about 15 minutes). The meat loaf is cooked when the internal temperature reaches 160°F.
  • Let stand for 5 minutes.
  • Pour any fat off the dish and serve.
