Sweet Strawberry Bruschetta
This sweet twist on bruschetta is the perfect light dessert or addition to any brunch spread.

Ingredients
- 2 tbsp. butter, melted
- 6 slices brioche, cut into quarters on the diagonal
- 3⁄4 cup strawberries, diced
- 1 tbsp. granulated sugar
- 1⁄2 tsp. vanilla
- 1 cup ricotta cheese
- 1 tbsp. powdered sugar
- 1 tsp. lemon zest
Directions
- Heat oven to 400° F.
- Brush a baking sheet with enough melted butter to coat lightly. Place bread quarters in a single layer; brush with remaining butter.
- Bake 10-12 minutes, flipping after 7 minutes or until lightly browned.
- Meanwhile, in a bowl, stir together strawberries, sugar and vanilla. Let stand at room temperature for at least 15 minutes.
- In a second bowl stir together ricotta, powdered sugar and lemon zest. Refrigerate until ready to serve.
- Top each toasted bread piece with about 2 teaspoons of the ricotta mixture and a generous teaspoon of strawberries.
- Refrigerate leftovers.
