Sweetened Brown Rice

This breakfast is perfect for a cold winter day, providing a great alternative to cold cereal.

  • 1½ cups soy milk
  • 1½ cups water
  • 1 cup brown rice
  • 1 Tbsp. honey
  • ¼ tsp. nutmeg
  • 2 cups sliced strawberries
  • ⅛ tsp. light brown sugar


  • Place all the ingredients except the fresh fruit in a medium-size saucepan; bring the mixture to a slow simmer and cover with a tight-fitting lid. Simmer for 45 to 60 minutes, until the rice is tender and done. Serve in bowls, topped with strawberries and a sprinkling of brown sugar.
