Tamarind Chili Sauce
The tartness from the tamarind juice coupled with the heat from chilies makes this the perfect dipping sauce for fried dishes such egg rolls.

- 3 Tbsp. tamarind juice concentrate
- 1 1⁄2 Tbsp. fish sauce
- 1 Tbsp. warm water
- 1⁄2 Tbsp. lime juice
- 1 Tbsp. palm sugar
- 1 tsp. minced garlic
- 1 small red chili, seeded and minced finely
- In a medium bowl, whisk together all the ingredients and refrigerate for 15 minutes. Sauce can be stored in the refrigerator for up to 1 week.
