This sauce is used to complement many different Thai dishes.

- ½ cup fish sauce
- 7 Tbsp. tamarind juice
- ½ cup palm sugar
- 1 tsp. red chili oil
- Mix together all the ingredients in a pan over medium heat. Cook until the sugar melts, stirring throughout. Remove from heat when slightly caramelized.
