Tandoori Chicken Kebabs

Ingredients

  • ¾ cup coconut milk
  • ⅓ cup peanut butter
  • 2 Tbsp. tandoori paste
  • 1 clove garlic, peeled and crushed
  • ¼ cup lemon juice
  • 1 tsp. five-spice powder
  • 4 boneless, skinless chicken breasts (6 oz. each), cut into large cubes

Directions

  • Mix coconut milk, peanut butter, tandoori paste, garlic, lemon juice, and five-spice powder. Pour mixture over chicken and refrigerate overnight.
  • Preheat grill.
  • Thread chicken cubes onto soaked wooden skewers and grill over direct heat 20 to 25 minutes, turning occasionally.
