Tarragon White Bean Salad

This is a lemony fresh salad with seriously simple prep. The hardest part is waiting the full 30 minutes before eating!

Ingredients

  • 1 can (15 oz.) white beans (cannellini or great northern beans), drained and rinsed
  • 1 medium shallot, peeled and sliced
  • Juice of 1 medium lemon
  • ½ cup finely chopped fresh tarragon
  • 2 Tbsp. olive oil
  • ½ tsp. sea salt
  • 1 Tbsp. garlic powder

Directions

  • In a medium bowl, mix together all ingredients. Refrigerate 30 minutes prior to serving.
