Tarragon White Bean Salad
This is a lemony fresh salad with seriously simple prep. The hardest part is waiting the full 30 minutes before eating!

- 1 can (15 oz.) white beans (cannellini or great northern beans), drained and rinsed
- 1 medium shallot, peeled and sliced
- Juice of 1 medium lemon
- ½ cup finely chopped fresh tarragon
- 2 Tbsp. olive oil
- ½ tsp. sea salt
- 1 Tbsp. garlic powder
- In a medium bowl, mix together all ingredients. Refrigerate 30 minutes prior to serving.
