Tender Glazed Carrots
This simple recipe is a great way to give carrots extra flavor.

- 2 cups baby carrots with stems, trimmed
- 1 Tbsp. olive oil
- 1 cup apple juice
- 2 Tbsp. maple syrup
- Heat the olive oil in a frying pan over medium heat. Add the carrots. Cook briefly until browned.
- Add the apple juice. Cover and cook over medium heat until the liquid is absorbed, about 25 minutes.
- Increase heat to high and add the maple syrup. Cook for 3 minutes, stirring, until the carrots are nicely glazed.
