Tender Glazed Carrots

This simple recipe is a great way to give carrots extra flavor.

  • 2 cups baby carrots with stems, trimmed
  • 1 Tbsp. olive oil
  • 1 cup apple juice
  • 2 Tbsp. maple syrup


  • Heat the olive oil in a frying pan over medium heat. Add the carrots. Cook briefly until browned.
  • Add the apple juice. Cover and cook over medium heat until the liquid is absorbed, about 25 minutes.
  • Increase heat to high and add the maple syrup. Cook for 3 minutes, stirring, until the carrots are nicely glazed.
