This quick sauce can be thickened with the addition of 1⁄2 teaspoon cornstarch dissolved in 2 tablespoons of water.

- 3⁄4 cup low-sodium soy sauce
- 1⁄2 cup water
- 1 Tbsp. mirin
- 1 Tbsp. sake
- 3 Tbsp. light brown sugar
- 1⁄2 Tbsp. minced garlic
- 1 Tbsp. minced ginger
- In a small saucepan over medium heat, whisk together all the ingredients and let the liquids come a low boil.
- Reduce heat to low and simmer the sauce until thickened, about 8 to 10 minutes. Use immediately or store covered in the refrigerator for up to 1 week.
