Tex-Mex Barbecue Chicken Salad

Ingredients

  • 2 Simple Truth™ Natural Boneless & Skinless Chicken Breast
  • 3/4 cup Simple Truth Organic™ BBQ Sauce, divided
  • Cooking spray
  • 3 tablespoons ranch dressing
  • 1 cup Simple Truth Organic™ Whole Kernel Cut Corn
  • 1/2 teaspoon smoked paprika
  • 6 wonton wrappers or soft tortillas, sliced into strips
  • 1 head Simple Truth Organic™ Romaine Lettuce, torn
  • 1 can Simple Truth Organic™ Black Beans, rinsed and drained

Directions

  • Place chicken breasts in a zip-top bag and cover with ¼ cup barbecue sauce. Seal bag and marinate for at least 30 minutes.
  • Heat a grill pan or skillet lightly coated with cooking spray to medium-high heat.
  • For dressing: In a small bowl, mix ranch dressing and 3 tablespoons barbecue sauce. Add more of each, to taste. Set aside.
  • In a pan or skillet, cook chicken breast 6 minutes per side until chicken is cooked through and juices run clear. Let chicken rest 2-3 minutes, then dice into small pieces.
  • In the same grill pan, add corn and sprinkle lightly with smoked paprika. Grill until some kernels are slightly blackened.
  • Also in the small skillet, lightly greased with cooking spray, cook wonton strips for 5 minutes until lightly browned and crispy, stirring occasionally. Set aside.
  • In a large serving bowl, place romaine, black beans, corn, wonton strips and chicken. Toss dressing to coat; drizzle additional barbecue sauce over individual servings. Serve immediately.
