- 1 cup cooked black beans
- 1 cup corn
- 1 cup chopped tomato
- 1⁄2 cup chopped onion
- 1 tsp. cumin
- 1 tsp. garlic powder
- 2 whole-wheat tortillas
- Preheat the oven to 400°F. Line a baking sheet with foil and spray foil with nonstick cooking spray.
- In a mixing bowl, combine the black beans, corn, tomato, onion, and spices.
- Lay the tortillas on the baking sheet and spoon the black bean mixture onto 1⁄2 of each tortilla, folding the empty half over. Press lightly to close.
- Bake for 5 minutes, turn, and continue baking for 5 minutes or until golden brown.
