Tex-Mex Quesadillas

  • 1 cup cooked black beans
  • 1 cup corn
  • 1 cup chopped tomato
  • 1⁄2 cup chopped onion
  • 1 tsp. cumin
  • 1 tsp. garlic powder
  • 2 whole-wheat tortillas


  • Preheat the oven to 400°F. Line a baking sheet with foil and spray foil with nonstick cooking spray.
  • In a mixing bowl, combine the black beans, corn, tomato, onion, and spices.
  • Lay the tortillas on the baking sheet and spoon the black bean mixture onto 1⁄2 of each tortilla, folding the empty half over. Press lightly to close.
  • Bake for 5 minutes, turn, and continue baking for 5 minutes or until golden brown.
