Thai Black Sticky Rice Pudding
This recipe is very easy to make and keeps quite well in the fridge. The combination of salty and sweet makes this dessert totally irresistible.

- 1 cup black sticky rice
- 2 cups water
- ½ cup sugar
- ¾ cup coconut cream
- 2 teaspoons salt
- Add sticky rice and water to a heavy, medium saucepan. Bring to a boil, over high heat. Reduce heat to low and simmer until rice is cooked and mushy, about 1 hour. Add more water if needed.
- Stir in sugar. Mix well to dissolve.
- In a small saucepan, heat coconut cream with salt over medium heat for 5–8 minutes.
- To serve, put scoops of sweet black sticky rice in small bowls and top with salted coconut cream.
