This is the main condiment at every Thai dining table, at home or in restaurants. Chilies pickled in fish sauce become less spicy.

  • ½ cup red or green fresh Thai chilies, sliced
  • ⅔ cup fish sauce to cover


  • Combine all ingredients in a bowl and let sit for 30 minutes.
